I'm going to be adding all kinds of different recipes whenever I get time. I think it's especially fun to remember the families recipes during the holiday's. Then of course we're all finding new and different ways to cook and bake, so those will be included also. FUN FUN!!






This is one of my favorite recipes, it's so easy and quick

Pollo Loco
1 Onion
2  tsp Olive oil
1  lb. Gr. Chicken or Turkey
2  Garlic Cloves, minced
Tbl. Ground Cumin
Cans (14 1/20z.) Mexican Style Stewed Tomatoes
Can (28 oz.) Tomato Sauce
Can (15 0z.) Small White Beans, rinsed and drained
Can (15 oz.) Pink bean, rinsed and drained
 Cup (2 oz.) Shredded low-fat Monterey Jack Cheese


DIRECTIONS

Sauté’ onion in oil in large saucepan over medium heat until soft. Add chicken(turkey) and cook 5 minutes or until no longer pink.
Add garlic, pepper and Cumin. Cook 5 min. longer. Add tomatoes with juice, tomato sauce, and mushrooms.
Heat to boiling. Reduce heat to low, cover and simmer 30 minutes, stirring frequently.
Add beans and continue cooking another 15 minutes. Serve in a bowl and top with cheese.
